Thibaut De Saint Pol
A former student of the ENS and ENSAE, Thibaut de Saint Pol is a sociologist who specializes in studying lifestyles and social inequalities in the field of health. He is a Director of the INSEE, a researcher at Sciences Po and a writer. He was awarded the Jean Trémolières nutrition research prize for his doctoral thesis on the social dimensions of overweight and the City of Paris award for research in gender studies.
WHY IS SLOW DRINKING SO IMPORTANT IN OUR SOCIETY TODAY?
"In a society that often makes speed synonymous with performance, taking time is quite a challenge. But it is only by doing so that we can once again rediscover the taste of the food we eat and the beverages we drink, and together with this, that we can enjoy them to the full."
HOW DO YOU THINK WE SHOULD ENJOY SLOW DRINKING?

"Savouring the flavours, of course, but also enjoying the pleasure of being together and sharing a moment over a glass.
Everything that surrounds the drink (the conversation, the place, the people present) is just as important as what is in your glass. Preparing cocktails yourself with the help of friends takes time, of course, but it's more satisfying (and brings much more laughter) than drinking glass after glass without paying any attention to what you are drinking.
Valuing quality over quantity is a question of time, not money. It's about rediscovering the art of taking your time and the pleasure that you get as a result."
